We cultivate 5 hectares of olive groves with about 1000 olive trees located on the hills around the village of San Vito in a farm called “I Piani”. The olive grove is connected to the farmhouse by a dirt road where you can walk or cycle; the road, after running along the park of Villa Marchetti, crosses the green woods in the valley of the river Vincio di Montagnana.

We produce and sell excellent quality extra virgin olive oil from trees cultivated without chemical treatments. The prevailing variety of olive trees is typical of the local area, that is the leccino, with different percentages of other varieties (frantoio, moraiolo, leccio del Corno, maurino and pendolino). The olives are manually harvested and immediately brought to a modern oil mill for cold pressing and oil is stored in a specially designated room.

In front of the farmhouse there is always a vegetable garden, in which, depending on the season, we grow tomatoes, courgettes, pumpkins, salads, cabbage, legumes, radishes, carrots, cucumbers, turnips, beets, spinach, etc.

In addition, over 200 fruit trees were recently planted on the terraces around the farmhouse: they produce nuts, hazelnuts, plums, apricots, peaches, apples, pears, cherries, etc. The trees were selected for their frugality and rusticity, drawing particular attention to biodiversity and to the reduction of the use of chemicals.

The vegetables and fruits produced in the farm are also used as ingredients for our restaurant.

Potatoes

The cultivation of potatoes, typical of the hilly areas near Pistoia, is carried out in the land plots in front of the farmhouse. The sowing takes place in late March with the choice of the best white or yellow paste varieties. Harvesting generally takes place in late July or in early August according to seasonal courses. Our production is focused on low-yield varieties, having superior organoleptic qualities compared to common potatoes on the market.
